Bananas don't freeze well,
other than if you are planning
on making banana bread or milkshakes.
Anything with a high fat content that you freeze yourself, needs to be consumed within about three months, or the fat starts to degrade.
Anything you buy pre-frozen will have been 'blast' frozen so can be kept more or less indefinitely.
Re-freezing cooked food that contains ingredients that were previously frozen is fine.
Re-freeing raw ingredients that were previous frozen not so much.
Tougher cuts of beef, and lamb and pork will become tender-er following freezing. Tender cuts will be come flabbier (though still perfectly edible) as was pointed out.
Frozen fish is probably fresher than 'fresh' fish bearing in mind the idiotic fish supply chain we 'enjoy' in the UK. The oilier the fish the less well it freezes.
Most cheese improves with age long past its 'use-by' date. so putting it in the freezer is pointless.
