The only rice pudding to top all rice puddings

is the majestically simple one you make

with black glutinous rice

(boiled with some pandan leaves or vanilla,

palm sugar added at the end

and served with a swirl of thick coconut milk,

slightly salted)

 A visual and culinary delight.
